Easter Dessert Idea: Spring Brownies

Spring Brownies RecipeEaster is right around the corner and with that comes a total sugar high with all the candy and baked goodness right? Here’s a super simple way to make a treat for the kids and company without breaking the bank and get all your supplies at your local Walmart (or other grocery store) for under $5.00 each or less. You can adapt this recipe to your families dietary needs as needed (sugar free, low sugar, gluten free, etc)

Shopping List:

  • Brownie mix of choice (eggs, vegetable oil, brownie mix)
  • Frosting or whipped topping
  • Edible Sixlets or baking pearls ($1.00 per package at Walmart, look on the grocery side with the cake mixes)
  • Cake Pan (rectangle or circular)

Directions:

  1. Mix brownie mix and ingredients together. Then bake brownies per directions on the brownie mix box. (Temperature for oven may vary by location, so please adapt)
  2. Let brownies cool slightly
  3. For the topping you can use whipped topping or regular frosting and your choice of color dye (green is the one used above). You can change this color for every season and keep it fresh.
  4. Add pearl sixlets to your liking

Brownies are pretty hard to mess up so this is a great recipe to let the kids help with and something even dads can do to surprise Mom with right? You can even chill the brownies for a hot summer day and add cool-whip on top instead of frosting.

Halloween Rice Krispie Treats – On a Stick!

Who doesn’t like treats! The kids are going to love these festive delicious Rice Krispie Treats!   

This is what we bought. I would just get the almond bark, and color that. It was the easiest to melt.

We also picked up this pumpkin pan, on Amazon.

I made 2 batches of Rice Krispie treats. If you have not made these before they are really easy. My 12 year old made these batches. It took 2 batches to make what you see in the picture.

When the rice krispies were hot, I pressed them into the pan.

The kids helped by putting the sucker sticks into the treats. We suggest dipping the sticks into the melted chocolate first then sticking them into the treats. We let them harden for a little while.

This kid is a pro. He ate about as many as he helped fix. (Good job bud)

While they were hardening a little more I chopped the almond bark and melted it on the stove. You can use the microwave but Tiffany prefers this way. 🙂 Just heat it slowly or you will burn it.

Then get the kids and start dipping them. You can do whatever colors you like, dip them a little or all the way. We did both. The kids had an easier time just dipping the tops and adding sprinkles.

The kids do this stuff all the time and love it!

You can start getting fancy and adding the pre-made figures you can buy at the store.

Paul’s mini Martha Stewart got the fanciest and was making Frankenstein.

We bagged them in the $.97 treat bags and tied with twist ties. I am sure you can add ribbon but I am just able to tie my shoes, ribbons are too much trouble 🙂

Tiffany walked in as they were wrapping up and added the candy corn to the bags and they looked great!

Southwest Grilled Corn Recipe

With 4th of July coming up, I wanted to share this Southwest Grilled Corn Recipe – it’s so easy and delicious!  It would go great alongside Tiffany’s Perfect Pesto Grilled Flank Steak and a big sliced baked potato….

Southwest Grilled Corn Recipe

What you need:

  • For this recipe, you’ll need a grill (I love my Traeger, but really you could be using one of these and still turn out some awesome corn).
  • Corn on the cob that you’ve shucked already (good job for the kids to do while you’re getting the charcoal hot)
  • Butter
  • Tajin or Lawry’s Seasoned Salt (not both) and Parmesan cheese
  • Optional: Lime slices and chopped cilantro for garnish

If you’re not sure what Tajin seasoning is – it’s a mix of ground chile peppers, salt and dehydrated lime juice that gives a great kick to corn.  You can find it here or in the International Aisle at most groceries.

Between the Tajin and the Parmesan cheese – your regular grilled corn gets a little Southwestern kick.  If you want to take it a step further, serve it with some lime slices and chopped cilantro!

Directions for Southwest Grilled Corn:

  1. Shuck the corn and throw it on the grill for about 5 minutes so it gets a little toasted.
  2. Pull it off and cover it in butter, seasoned salt (or Tajin) and Parmesan Cheese.  Go with your best judgement on how much to use.
  3. Wrap tightly in foil and place on the grill in a spot away from the hottest part (where the meat would go).  Try to find a medium hot spot  – or use that handy vegetable tray if your grill has one.
  4. Let it roast for 15-20 minutes until done, don’t leave it on too long or it will dry out.

Cook time: 20 mins
Total time: 25 mins

Ingredients

Beef n Broccoli with Rice Recipe

We all know that eating take-out can be costly especially if you have a larger family. Beef n Broccoli is one of our favorites and we can make it at home at a fraction of the price that it costs to order it from a restaurant! Check your Valpak envelopes to get an additional $1.50 off Mahatma Rice coupon that’s available in select cities.

If you’ve never tried Mahatma Jasmine or Basmati Rice then welcome something new to your palate. At first I wasn’t so sure about it because it looked different and cooked differently too. We opted to try the the Mahatma Basmati Rice (our Walmart didn’t carry the larger bags of it just yet but isn’t that purple eye catching?) When you cook the Mahatma Basmati Rice you can even smell the difference!

I’ll be honest and say we took the easy way out and just made a quick Beef n Broccoli Dish to serve over rice but man was it awesome. You know we can’t share a recipe without telling you how to save on it right?

You can make your own at home by following this easy recipe:

You will need:

  • Frozen or Fresh Broccoli Cuts (Florets work awesome)
  • Beef Tips or lean cut of beef
  • Been n Broccoli Seasoning or Mix (found in the seasoning aisle)

Step 1: Cut your beef cuts into small pieces (or desired size) and cook until done

Step 2: Steam your broccoli to make it tender (takes about15-20 mins on medium-high heat). Add beef cuts and broccoli together into one pan

Step 3: Mix your Beef n Broccoli Seasoning per directions on package and add to beef n broccoli mixture and stir until everything has a good coating on it.

Step 4: Serve over Mahatma Basmati Rice

I”ll give you another truth and tell ya I didn’t know there were this many types of rice but just to share with you there’s a different between the Jasmine and Basmati Rice!

Easy Pizza Pasta Bake Recipe ($2 per Serving!)

This is a repost of a recipe I mentioned a few years back.   It’s a classic in our house – so if you missed it before, check it out!

When it comes to making budget friendly meals, Walmart is a great place to find all your ingredients in one place. (I’m guessing you already know that since you are reading I Heart the Mart.) I am going for “Master of the Obvious” today!

Tonight, I went to Walmart and picked up all the ingredients I would need to make this tasty and kid-friendly meal: Pizza Pasta Bake. My total was less than $13 and it will make an entire pan of the casserole to feed 4-6 people, even more if they are little people!

This meal is so simple I am convinced you do not have to be a master chef to make Pizza Pasta Bake and it would make a great freezer meal to heat up later. This recipe calls for ground turkey. If you have not tried substituting ground turkey in your ground beef recipes, I highly suggest it. Not only is it usually a lot cheaper than ground beef, it is low fat. My family can’t really even taste the difference, either.

I also used a new product I saw on the shelves here. In the section where the canisters of Parmesan cheese are sold, is a brand called Mama Francesca. There were three varieties there. I chose the Parmesan Garlic. It really added a big amount of flavor to this dish and upped the awesome factor! If not use what you have and add a little garlic to it.

To make the Pizza Pasta Bake, you will need:

  • 1 frozen lb of ground turkey ($2.58)
  • 1 box Ziti or Rigatoni ($1.00)
  • 1 bag of Velveeta’s shreds in Queso Blanco ($2.00)
  • Ricotta Cheese, skim milk variety ($1.94)
  • Armour Pepperoni ($2.28)
  • Mama Francesca’s Parmesan Garlic cheese blend ($2.98 minus 55 cent peelie coupon=$2.43)
  • 1 can of your choice Hunt’s Pasta sauce. I used Mushroom. ($1.00)
  • 13 x 9 pan
  • Large bowl
  • Spoon or spatula
  • Non-stick Spray

To Make Pizza Pasta Bake:

1. First, brown the ground turkey. You will not need to drain it because it is so low in fat, the moisture in it will evaporate. Pre-heat oven to 350 degrees.

2. When you start the browning of the turkey, also start the water for your pasta.

3. After you drain the pasta and the turkey is cooked, place them both is a large bowl. Gently fold together.

4. Add the Hunt’s Pasta Sauce and coat the mixture. Shake in the Mama Francesca’s Parmesan cheese and fold in. You don’t need a lot, about 1/2 cup will do.

5. Add one handful of Velveeta shreds and mix in.

6. Add a cup of ricotta cheese and mix the entire mixture well.

7. Pour into a 13 x 9 coated pan. Level it out.

8. Add a layer of pepperoni. Top with remaining Velveeta Shreds.

9. Place in oven for 15-20 minutes until cheese is slightly brown and the bake is sizzling.

10. Allow to rest for 5 minutes and enjoy!

Because you do not use the entire container of Mama Francesca’s cheese, you should have a bunch left over to use in other recipes. I hope your family enjoys this Pizza Pasta Bake as much as my family did!
