Awesome Pulled Chicken Sandwiches

The Pulled Chicken recipe from the January All You magazine was an immediate hit at our house! Crock Pot recipes are a lifesaver to me, as we are always running different directions. This was very easy and quick to make. I was able to prep it in less than the 10 minutes suggested. Cook time is approximately 5 hours, but could be adjusted with a higher cooking temperature.

I recommend doubling this if you have a large or hungry family! It makes great leftovers for quick lunches, too. Substituting pork for the chicken would reduce costs even further.

This is a pretty healthy meal, with only 232 calories and 3g of fat per serving ( I ate mine without the bun, of course). It would also be great served over baked potatoes or in a whole wheat wrap.

Ingredients

2 onions, thinly sliced
1 pound boneless, skinless chicken breasts
3/4 pound boneless, skinless chicken thighs
1 cup ketchup
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 tablespoons molasses
1 teaspoon onion powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon Tabasco
1/2 teaspoon salt
Whole-wheat hamburger buns, optional

Frozen Strawberry Mousse

Frozen Strawberry Mousse is a nice alternative to ice cream and a great dessert for last minute guests or a special night in for Valentine’s Day. It’s quick and easy to make and I promise you’ll love it. It’s a lot like a sorbet but more rich and creamy.

If you are making this tasty Strawberry Mousse for your Valentine I recommend picking up these red Rachael Ray ramekins for serving.

Frozen Strawberry Mousse

Ingredients:

2 cups frozen strawberries
1-2 tbsp sugar (or other sweetener)
1 egg white
blender
whipped topping optional

Instructions:

Pour frozen berries and sugar into blender. Blend on high until berries are crushed.

Add the egg white to the berries and continue blending on high. Periodically scrape the sides of the blender down with a spatula and continue blending. The mixture will become light and almost fluffy.

The egg white is the key to making this mousse. It works much like the egg whites when making a meringue for a pie. When blended with the berries and sugar it creates an amazing flavor and texture.

If you’re concerned about the raw egg whites, consider using a pasteurized egg white or substitute.

When the mousse has reached the right consistency, layer it in serving dishes with whipped topping or homemade whipped cream.

I love this dessert because I know every ingredient. It’s a really healthy alternative and it’s dairy free (without the whipped topping). It makes a great grown-up, romantic dessert but it’s something the kids will absolutely love too!
