Copycat McDonald’s Big Mac

Two all beef patties, special sauce, lettuce, cheese…we all know how the jingle goes but do you know how to make a Copycat McDonald’s Big Mac that you can enjoy at home (and know exactly what all the ingredients are)?   I’m going to give you the secret to making that perfect burger at home!

Copycat McDonald’s Big Mac

(Yields 1 Burger)

INGREDIENTS:

Special Sauce:

  • 1/4 cup Miracle Whip
  • 1/4 cup Mayonnaise
  • 2 heaping tbsp French salad dressing (like Wishbone Deluxe)
  • 1/2 tbsp Sweet Relish
  • 2 heaping tsp Dill Pickle Relish
  • 1 tsp Sugar
  • 1 tsp Dried Minced Onion
  • 1 tsp White Vinegar
  • 1 tsp Ketchup
  • 1/8 tsp Salt

Burgers:

  • 2 thin 2 oz Patties
  • 1 Sesame Seeds Bun
  • 1 additional Bun Bottom
  • 1 slices American Cheese
  • 1 tbsp Special Sauce
  • 1 tsp finely diced Onion
  • 1/2 cup chopped Lettuce
  • 2 Dill Pickle slices
  • dash of Salt
  • dash of Pepper

DIRECTIONS:

Mix special sauce ingredients until well blended in a microwave safe container. Microwave 25 seconds. Mix well again. Cover and refrigerate at least 1 hour before using.

Cut browned side of extra bun half away, leaving piece to use as middle.

Lightly toast all of the buns on pan or griddle and set them aside.

Cook patties in hot pan 1-2 minutes each side lightly salting and peppering.

On bottom bun, add 1/2 tbsp Special Sauce, 1/2 tsp dice onion, 1/4 cup lettuce, slice of American cheese and 1 patty.

On the middle bun, add 1/2 tbsp Special Sauce, 1/2 tsp dice onion, pickles, 1/4 cup lettuce and 1 patty.

Place the middle bun section on top of the bottom bun section and top with the top bun.

Sit back and enjoy your masterpiece!  A Big Mac never tasted so good as one you made yourself with ingredients from your own pantry.  There will be enough sauce left over for several of these delicious burgers.  Store in the refrigerator in a mason jar with a tightly fitting lid for up to a week.

10 yummy meals for under $10010 Meals for Under $100 at Walmart is a list of our families favorite recipes that you can make buying the ingredients at Walmart. Each recipe is under $10, with the exception of the Easy Cheesy Shells, it is a little over.

So many people have asked about recipes lately that Tiff and I put these together for you. These aren’t all part of my 30 Day Great Weight Rollback Challenge, but they are definitely quick, cheap meals that your family will love!!

I am accounting for the fact that you will have basic spices and flour already in your pantry. Also, you will be over buying a little food like frozen mixed vegetables, and eggs. This is for a family of 2 adults and 2-3 kids depending on how much your little kids eat.

Prices will vary some per store, I am buying mostly Great Value Brand items unless I have a coupon that makes the name brand lower. I am adding a bagged salad to each meal and possibly a side dish if needed.

8 Can Mexican Chicken Soup – $8.80

Easy Cheesy Shells – $14.78

Buttermilk Chicken – $9.95

Taco Pasta Dinner – $8.83

Crispy Cheddar Chicken $10.58

Easy Biscuits & Gravy with Fruit $6.35

Chicken & Cheese White Enchiladas – $11.71

Beef & Egg Tortas $6.29

Chicken/Shrimp Fried Rice $7.15

Chicken Pot Pie $9.26

Total: $93.70!

Slider Sandwiches for the Game (Or Mother’s Day!)

I posted this Slider Sandwiches recipe way back when, but wanted to mention it again.   If you’re looking to take over dinner duty for mom Mother’s Day – this is an easy recipe just about anyone can put together. The kids can even get in on the action!

These are my favorite sandwiches my wife makes for Sundays. They are a HUGE crowd pleaser. Great for the game at home – or to take to someones house, these are a winner!

Ham and Cheese Sliders Recipe
recipe adapted from Vanilla Kitchen

You’ll Need:

  • 2 TB dried minced onions
  • 1 TB Dijon mustard (I used 2 TB)
  • 2 TB poppy seeds
  • I used a couple dashes of Worcheshire sauce
  • 1 stick melted butter
  • 1 dozen dinner rolls – potato rolls work great (I used 2 doz. Martin’s Famous Dinner Potato Rolls)
  • 1/2 pound sliced ham (I used sweet capicola)
  • 1/2 pound thinly sliced Baby Swiss cheese

Directions:

  1. Preheat oven to 325°.
  2. In a small mixing bowl mix onion, mustard, poppy seeds, and melted butter.
  3. Leaving the dinner rolls intact, slice them open so that you have one solid top and bottom. Don’t slice each one open, but rather as a whole.
    *It’s nice to have a good sharp bread knife for this, so it’s long enough to go through the whole pan of rolls all at once without smushing them.
  4. Place the bottom half on a baking sheet or in a 9×13 inch baking pan, the pan size will depend on choice of rolls.  For big families – or groups – one of my favorite pans is this huge 10 x 15 Pyrex dish.  You can just about fit two packs of rolls in there if you arrange them right.
  5. Line the bottom half of the rolls with cheese slices and ham.
  6. Return the top part of the rolls and drizzle the butter mixture evenly over top.
  7. Cover with foil and bake for 20 minutes. Now use a sharp knife to separate the sandwiches.
    (I baked for 15 minutes with foil then about 7 with foil off as I wanted the tops to get a bit of crunch).

These can be made ahead of time and refrigerated, may require 5 more minutes of baking. Also can be prepared ahead and frozen. Defrost in refrigerator overnight and bake as directed.

Did you know that an 11 year old kid named Frank Epperson invented the “popsicle” one night in San Francisco? It was 1905 and he left a glass of soda he had made outside with a stir stick in it. Well it froze that night and the next mooring when he saw his glass, he pulled out the frozen treat and ate it!

When he was older in 1922 he started selling them at a local fair, and pretty much the rest is history!

All You Recipe: Orecchiette with Broccoli, Tomatoes and Sausage

Tonight I made this dish from the Feb All You Magazine. I thought it was really good. The entire meal cost $11.88 for all the supplies and I even doubled it for my family. So about $.99 a serving.

Orecchiette with Broccoli, Tomatoes and Sausage

Prep Time: 10 minutes
Cook Time: 25 minutes
Yield: Serves 6
Cost per Serving: $1.21

Ingredients
1 tablespoon olive oil
2 cloves garlic, finely chopped
8 ounces hot or sweet Italian sausage, removed from casings
1 15-oz. can diced tomatoes, with juice
Salt
1 pound orecchiette or pasta shells
4 cups small broccoli florets (from one head)
Shredded Parmesan, optional

Preparation
1. Warm oil in a medium skillet over medium-high heat. Add garlic and sauté until fragrant, about 30 seconds. Add sausage and cook, breaking up with a wooden spoon, until it loses its pink color, about 6 minutes. Add tomatoes with their juice and 1/4 tsp. salt and cook, stirring occasionally, until most of juice has evaporated and sauce has thickened, about 10 minutes.

2. While sauce is cooking, bring a large pot of salted water to boil. Stir in pasta and cook according to package label directions. In last 2 minutes of cooking time, stir in broccoli and continue to cook until pasta is al dente and broccoli is tender. Drain, return to pot and toss with sauce. Serve immediately, with shredded Parmesan on the side, if desired.

I am at a point where I need a high protein diet, but I have to keep my cholesterol down so I am trying new things. I grabbed a couple of rolls and we will probably have this for breakfast Sunday morning.

Mylitter Biscuits and Gravy

Here is Tiffany’s Super Easy and Really Awesome Biscuits & Gravy Recipe:
  • Fist brown a roll of (Turkey)sausage or whatever kind you like.
  • Break the pieces up into small chunks as it is cooking.
  • When brown, do not drain. Add about 5T of flour to coat the sausage.
  • Next, turn the heat to medium and add about 1 1/2 cups milk. Stir all together and cook for a few minutes. The flour is going to start thickening up into gravy. You are going to have to add more milk, a little at a time, to get the gravy to the consistency that you and your family like. In total I add about 2 1/4 cups milk but honestly every batch is different.

Bake up some really nice buttermilk biscuits, and you have a super simple yummy meal!
