A Meal Plan where you can feed a family of 5 for less than $2.00 per meal can really make your grocery budget go a long way.  You certainly can’t eat out or feed your family convenience food for $10 per meal, sometimes not even $10 per person.  This weeks meal plan has some really hearty recipes that are feel good food for fall.   They are still easy to prepare, filling, and your family will love them!

Meal Plan ~ 7 Meals Under $2.00 Per Serving

Beef Kebabs with Orange Glaze

While fall is upon us, there will still be lots of opportunities for grilling or grill type foods.  Your family will love these beef kebabs and served with a side of rice or potatoes it will make a filling meal!

Sauteed Chickpeas with Broccoli and Parmesan

This is an easy and healthy one dish, meatless meal.  The chickpeas are a great source of nutrition and add lots of flavor and texture.

Stew is one of our family’s favorite fall meals.  It’s easy to put together, filling, and makes a great lunch the following day (if there is any left over).  If you had left over meat and veggies from the kebabs on earlier in the week, you can add that right into the stew too.

Ham and Cheddar Supper Waffles

These waffles are kind of like having breakfast for dinner but so much better!  The ham and cheddar turns a normally sweet meal into something savory and hearty.

Potato soup is another family favorite.  I love potato soup and will try it almost every time it’s available at a restaurant.  I think I still prefer making it at home though.  This is a great recipe that’s easy to make!

This is another really great, one dish meatless meal.  It’s filling and different than your traditional casserole.

A lot of weekends, our big meal for the day is breakfast instead of lunch or dinner.  This Sausage Breakfast Casserole is filling and packed with so much flavor.  It’s also a great way to sneak in veggies if you have picky eaters who “don’t like veggies”.

If your family likes pizza, they’ll love this dish.  It’s quick and easy to prepare but delicious and filling.

Tuesday Night – Taco Salad In A Bag

This is such an easy meal and has been a long time family favorite for us.  Tiffany talks about it being great for camping or even an after school snack but it’s also a great dinner when everyone is in a rush or heading to different places at different times and sitting down as a family doesn’t always work.

Wednesday Night – Easy Taco Ring with Croissants

My family could eat tacos every night of the week I think.  On Tuesday make up a double batch of taco meat and this Taco Ring will be easy to put together with the leftovers.  This is also a great party food!

Thursday Night – Crispy Prosciutto Sandwich

Do you love a good BLT sandwich?  If so, you’re going to really love this Crispy Prosciutto Sandwich with caramelized onions.  Sandwiches are a great weeknight meal for a busy family!

Friday Night – Spinach and Feta Quesadillas

Maybe you’re tailgating or getting ready to head to the football game.  These Spinach and Feta Quesadillas are a great eat on the run meal.  Though they’re a bit fancier than your traditional quesadilla, your family will enjoy them just the same.  If you have a quesadilla maker, they’re even easier to make!

With school back in session, we’re looking for fast and convenient Meal Plans.  This week I have 3 meals for you that are perfect for weeknights and the cost is less than $10 per meal.  To make it simple for you, the recipes and shopping list are easy to print at the bottom of this post.  Whether you have kids in sports or other activities, it’s nice to have a meal plan that includes healthy options and is quick to serve to your family.

Monday Night – Easy Cheeseburger Casserole

This meal is filling and delicious.  It’s an easy casserole and can be made ahead for reheating at dinner time.  Mondays can be hectic so starting the week with something that is easy to put together but filling is important now that school is back in session.  Do you all find your kids are “starving” come dinner time those first days of school?

Wednesday Night – Hawaiian Barbecue Chicken

I don’t know about your house, but here it seems like Wednesday is one of the busiest days.  The week is in full swing and we’ve already been running for a couple of days.  This is a perfect mid week recipe to put in the crock pot in the morning and come home to in the afternoon.  There’s not much better than coming home to dinner mostly made.  Serve this with rice or on rolls for a quick and easy mid week meal.

Friday – Mexican Chicken Wraps

Friday nights can be really busy, especially if you have a child (or many children) in sports.  Sometimes we end up with more of a tailgating dinner than a sit down dinner when there are games to attend.  These Mexican Chicken Wraps are perfect for tailgating.  Make them ahead and wrap them in parchment paper and pack them for a meal on the go.  Grab a bag of chips to go along with them for a fast and filling meal.  They’re also great at the dinner table or for a quick lunch.

I hope you’re enjoying our weekly Meal Plans.  This week, the format is a little different.  We’ve planned 4 meals but you’ll be cooking only twice.  Using up leftovers is a great way to save time and money!  Some families don’t care to eat the same thing two nights in a row and because of that, a lot of leftovers can go to waste and be thrown away.  With this 4 day plan, you can alternate nights so you aren’t eating the same basic foods 2 nights in a row.

Monday Night – Dr. Pepper Pulled Pork Sandwiches with Easy Coleslaw $12.84
As my wife says, “You don’t get any easier than Dr. Pepper Pulled Pork”.  It’s a great recipe you can throw in the crock pot and forget about.  After a case of the Mondays, who wouldn’t want to come home to the delicious smell of pulled pork slow cooked and ready to eat?  Not only is the pulled pork easy but I’m including a quick way to make coleslaw to serve along side these pulled pork sandwiches.

Tuesday Night – Grape Chili Meatballs with Mashed Potatoes and Corn on the Cob $7.58
The recipe I’m linking to calls for turkey meatballs but we substituted with regular Great Value Italian Style Meatballs.  This is a filling meal and great to add to the plan for the upcoming cooler months.  Meatballs aren’t just for spaghetti or appetizers.  Serve these Grape Chili Meatballs with mashed potatoes and fresh corn on the cob.

Wednesday Night – Pulled Pork Nachos $9.32
Sound like a crazy idea?  Seriously, if you’ve never had BBQ Pulled Pork Nachos, your life isn’t complete!  It’s a great way to use up the leftover pulled pork from Monday night’s Dr. Pepper Pulled Pork Sandwiches.

Thursday Night – Meatball Subs with Kettle Cooked Chips and Pickle Spears $9.91
Again, use up those leftovers.  The Grape Chili Meatballs from Tuesday night make a great meatball sub for a new meal tonight.  Keep things quick and easy and serve with chips and pickle spears.

We’ve been sharing weekly Meal Plans with you and this week’s meal plan theme is – Pie for dinner!  Who could pass up that?  While these aren’t the dessert pies that may first come to mind, these savory pies are just as delicious!  They are also very affordable to make, easy to put together, and filling.  You can make them ahead for reheating on busy week nights or any of them are perfect for Sunday dinner.  Again, we’re giving you the links for each recipe, a printable shopping list, and the price break down for these great meals!

Anything made in individual servings is fun and the kids always enjoy them.  This Mini Shepherds Pie is no exception.  Make them in a muffin tin for perfect portions.  Shepherds Pie is filling and a great all in one dish to serve the family.

Homemade Chicken Pot Pie – $9.82

Chicken Pot Pie is a family favorite and while there are lots of great frozen options, there is nothing quite like a Homemade Chicken Pot Pie that feeds the whole family!  There really isn’t much to making this dish but it looks as good as it tastes!  This is a recipe that even works for a Sunday meal for a house full and making 2 isn’t any more work than making 1.

We love pizza and while it’s sometimes nice to order a pizza on a busy night and have a no fuss meal, my family will always pick homemade pizza over take out or frozen!  Sometimes we make individual pizzas and everyone can pick their own toppings and other times we’ll make a big deep dish pizza pie to eat as a family!

Spaghetti Pie – $9

Does your family love spaghetti and other pasta dishes?  We found this great Spaghetti Pie recipe on AllYou.com.  There are so many great recipes in All You Magazine and on AllYou.com.  This one has become a family favorite and isn’t your typical spaghetti for dinner.  It has bacon in it.  Who doesn’t love a recipe with BACON?!?
