Homemade Chicken Pot Pie Recipe – $11.57 at Walmart for ingredients!

What are you having for dinner tonight? It is a little cooler here and so I want to stick something in the oven and have the house smell good! Since there are some good coupons out I am going to make Homemade Chicken Pot Pie! I used zip 77477.

The total cost at my Walmart for the ingredients was $11.57. That is under $2 a serving as this serves 6 for a pie. You can double it and put it into a 9×13 pan.

There are a few coupons that you will need:

Easy Homemade Chicken Pot Pie

Ingredients

  • 2 (9 inch) pie crusts $2.49 ( after $.50/2 coupon)
  • 1 (10.75 ounce) can condensed cream of chicken soup $.60 ( after $.40/3 coupon)
  • 1 (8 ounce) tub or package cream cheese $1.48 (after $1/1 coupon)
  • 1/2 (16 ounce) package frozen mixed vegetables, thawed $2.00
  • 3 cups cooked, diced chicken meat $5 ( I use a rotisserie chicken and pull the meat off)

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a large mixing bowl combine soup and softened cream cheese. Mix until thoroughly blended. Stir in vegetables and chicken.
  3. Pour chicken mixture into pastry-lined pie pan. Cover with top crust. Seal and cut steam vents in top. Cover edges of crust with aluminum foil to prevent overbrowning.
  4. Bake in preheated oven for 35 to 40 minutes. Remove foil halfway through baking to allow edges of crust to brown. Check often late in cooking time to ensure crust is not burning.

** We also make this in a 9×13 casserole dish. Another variation is to add biscuits to the top instead of a pie crust.

Now, I am not going to brag or anything, but I make KILLER sausage stuffing every year!

This is my Pork Sausage Stuffing recipe.

Ingredients
1 (8.5 ounce) package corn bread mix
10 slices firm white bread
1 pound bulk spicy pork sausage
2 cups sliced celery
1 large onion, chopped
2 teaspoons dried sage
1/4 cup melted butter
1 (14 ounce) can chicken broth
2 eggs

Directions
The day before you want to make the stuffing, bake the corn bread mix according to package directions, remove it from the pan, cover lightly with a cloth, and leave it to dry overnight. Tear the bread into pieces and leave it out overnight to dry.
About 1/2 hour before serving, preheat an oven to 350 degrees F (175degrees C), and grease a 1 1/2-quart baking dish.

Place the sausage into a skillet over medium heat, and cook and stir the sausage, breaking it up as it cooks, until the meat is browned, 8 to 10 minutes. Stir in the celery and onion, and cook until the onion is translucent, stirring occasionally, about 8 minutes. Stir in the sage.
Tear up and crumble the corn bread into a large bowl. Break the bread apart into 1/2-inch pieces, and lightly mix it with the corn bread. Pour in the melted butter, stir to combine, and lightly mix in the sausage mixture.

Whisk the chicken broth with the eggs, and stir into the corn bread mixture. Place the stuffing into the prepared baking dish, cover with foil, and bake in the preheated oven until the stuffing is cooked through and hot, about 30 minutes. Uncover the dish and return to the oven to bake until the top is lightly browned, about 10 more minutes.

Bob Evans has released a few new coupons that you can find under 22122.The one that I am really excited about is the $.35/1 Sausage Roll. If your store triples this will be over $1 off! Even if they don’t it is a good excuse to have biscuits and gravy. Which is a favorite dinner meal around here!

::Easy Biscuits and Gravy Recipe::

A friend taught me this recipe many years ago and it is a staple for breakfast and dinner at our house! It is super easy and I always have everything on hand.
I normally make my own biscuits but I have found this brand of frozen and I love them!

Fist brown a roll of sausage. We like maple flavor but you can use whatever you like.

Break the pieces up into small chunks as it is cooking.
When brown, do not drain. Add about 5T of flour to coat the sausage.

Next, and I forget to take pictures, turn the heat to medium and add about 1 1/2 cups milk. Stir all together and cook for a few minutes. The flour is going to start thickening up into gravy. You are going to have to add more milk, a little at a time, to get the gravy to the consistency that you and your family like. In total I add about 2 1/4 cups milk but honestly every batch is different.
Bake up some really nice buttermilk biscuits, and you have a super simple yummy meal!

My kids will all eat about 2 biscuits and I am at the point of almost having to make 2 rolls of sausage!

Easy. Takes about 15minutes start to finish. We eat this for breakfast and dinner!

Chipotle Chicken Salad Video Review

On page 134 of the March All You magazine is a Chipotle Chicken Salad recipe. It was really good… if you were over the age of 30. 😉 Haha, I also just caught my 5 year old daughter wiping her mouth on her shirt!

Chipotle Chicken Salad

1 1/2 lb Chicken Cubed
1 red onion cut into wedges
1 cup chopped jarred roasted red peppers
3 T Sour Cream
2 T Mayo
1 T Minced seeded chipotle chiles in adobo sauce plus 2t. of sauce
1 T lime juice
1/3 cup finely chopped cilantro

Just mix it all together and serve!

Now, my wife and I liked it, the kids not so much. Also, in this video is the newest addition to the family. Sarge, the puppy I got on Sunday for my wife, she needed someone else to potty train 🙂

Quick and print this one. Any coupon for meat is a good one! I used 77380 and looked under food. This is what we do with pork loin.

Pulled Pork Sandwiches

1 Pork Loin
1 Bottle Bar B Que Sauce ( I use Sweet Baby Rays)
Little bit of liquid smoke
Rolls

Brown all sides of the roast in some oil in a large pan. Transfer to a crock pot and add about a cup or two of water. Salt and pepper to taste. Cook on high for 4-6 hours until you can pull it apart without effort with a fork. Drain off almost all the liquid, leave about 1 cup add about 1t. liquid smoke to it. Add an entire bottle of B-B-Q sauce, we love Sweet Baby Ray’s the best. Stir it into the meat, turn down to low on crock pot and let cook fro another hour or until you are ready to eat. Serve on hard rolls or your favorite kind!

Hawaiian Grilled Cheese – All You Feb Recipe Review

With the weather being so bad and cold I wanted to make something to remind us it will get warm quick here in TX. We also had a busy night so we needed something quick.

This is just a basic grilled cheese with ham and pineapple.

I spent $14 on everything for dinner, we had tomato soup with it also. I bought 1 lb. each of cheese and ham. We only used 1/2 lb on 7 sandwiches, so I have a bunch left over for kids lunches tomorrow.


Prep Time: 5 minutes
Cook Time: 7 minutes
Yield: Serves 4
Cost per Serving: $1.45

Ingredients
8 slices white bread
2 tablespoons unsalted butter, softened
4 ounces deli ham
8 slices Cheddar or American cheese
1 cup canned pineapple chunks packed in juice, drained and patted dry
Mustard, optional

Preparation
1. Spread one side of each slice of bread with butter. Lay ham on unbuttered side of 4 of the slices. Top each with 2 slices of cheese and pineapple chunks. Spread unbuttered sides of remaining bread slices with mustard, if desired. Place those 4 slices, buttered sides up, on top of pineapple.

2. Place sandwiches in a large nonstick skillet over medium-low heat and cook, pressing down on them occasionally with a spatula, until golden on one side, 3 to 4 minutes. Carefully turn and continue to cook until golden on the other side, about 3 minutes longer. Cut each sandwich in half and serve immediately.

** My daughter has transformer Valentines tattoos on her forehead…. I could not even tell you why she thought that was the best place to put them?!
